Flax Seed Apple Cinnamon Rolls

Ok so I went to a bridal shower today and I was just truly inspired to cook again. Dallin and I have been trying recipes with low sugar. This is a great one!

Preheat Oven

  • 350 degrees F

Ingrediants

The dough:

  • 2 tbsp sugar (only so the dough would rise, substitute what you like… ie. Molasses)
  • 1 tsp salt
  • 1 3/4 cup wheat flour (if you freshly grind up the wheat it’s even better!)
  • 1/2 cup flax mill (take flax seed and put it through a wheat grinder or you can buy the flax mill)
  • 3/4 cup white flour (+ a little extra to knead, use more wheat if you like!)
  • 2 tsp yeast
  • 1/4 cup water
  • 1 egg (or 2 egg whites)
  • 7/8 cup milk
  • 1/4 olive oil

The filling:

  • 1 tablespoon cinnamon
  • 1/4 cup butter to spread (I used Country Crock spread)
  • 1 apple chopped into tiny pieces (I used a hand chopper to do that)
  • 3/4 cup apple sauce
  • 1/2 cup raisins

Instructions

  1. Make the dough, mix well water, milk, eggs, and olive oil.
  2. Then add sugar, salt, cinnamon, wheat flour, flax, and yeast.
  3. Knead and add extra flour until dough consistency.
  4. Let it rise for 1 .5 Hours, then knead again.
  5. Roll out dough as if you were making cinnamon rolls.
  6. Spread butter on dough.
  7. Mix the apple pieces, apple sauce, raisins, and cinnamon in a small bowl
  8. Spread apple mixture on the dough.
  9. Roll the dough as if you were making cinnamon rolls.
  10. Slice the dough and put in 9×12 casserole dish (Makes about 12 rolls)
  11. Bake @ 350 degree F for 40-45 minutes or until dough is set
  12. YUM… eat it while it’s warm! Add some honey if you want it sweeter but the taste is already great!

Super CHUNKY Salsa

I made this a lot when I was with my roommates. Super fulfilling. You might enjoy it! Add some hot sauce if you want to make it spicy. My suggestion would be Valentina Salsa Picante (my neighbor introduced us to it)!

Serving Size

  • 1 Quart of Salsa

Ingrediants

  • 15 oz of Pinto Beans (1 can)
  • 15 oz of Black Beans (1 can)
  • 15 oz of Cooked Corn Kernels (1 can)
  • 2 Large tomatoes or a few small Roma tomatoes diced
  • 1 Green Pepper diced
  • 2-3 leaves of Cilantro chopped up small
  • 2-3 Tablespoons of diced Onion
  • 1/2 teaspoon of Garlic Salt
  • 1/2 teaspoon of Thyme
  • 1/2 teaspoon of Onion Powerder

Instructions

  1. Chopped everything up and combined in a bowl!
  2. Let sit overnight so the flavor can soak in (but if you’re too tempted you can eat it right away too… it just won’t be as juicy) 🙂



Edo Copy Cat Stir Fry

Have you ever been to Edo at the mall? You know that place that makes Japanese food. This is kinda like their stir fry. Yummy! You can serve this with brown or white rice on the side. If you want this to have more terriyaki taste… Just add another tablespoon of sugar.

Serving Size

  • 2 people

Ingrediants

  • 1/2 pound of chicken thighs, remove bone, chopped into small pieces
  • 2 sticks of celery chopped in little slices
  • 1/4 of an onion chopped in strips
  • 1/2 green pepper chopped in strips
  • 1/4 of a cabbage chopped in about 2 inch strips
  • 1 cup of brocoli
  • 2-3 cloves of garlic minced
  • 1 Tablespoon sugar
  • 2 Tablespoon soy sauce
  • Garlic Salt
  • Lemon Pepper

Instructions

  1. Cook the chicken on medium heat on the stove in a frying pan add garlic.
  2. Sprinkle chicken with lemon pepper and a little bit of garlic salt.
  3. Once the chicken is almost done turn the heat down  1-2 notches add the onions, celery, and green peppers. Stir and cook for about 3 minutes.
  4. Then add the broccoli and cook for another 2 minutes.
  5. Then add the cabbage strips.
  6. Now let the cabbage cook for 5 minutes on low heat.
  7. Sprinkle lemon  pepper and garlic salt.
  8. Then add the soy sauce and sprinkle on the sugar.
  9. Stir and make sure everything is mixed in well.
  10. Serve stir fry with a side of white or brown rice.

Banana Oatmeal Cookies

No sugar added, no flour, no egg cookies! But don’t let that deceive you… these are really good! Try them before you judge them. They are puffy little cookies.

Serving Size

  • 16 cookies

Preheat Oven

  • 350 degrees F

Ingrediants

  • 2 bananas mashed
  • 2 cups of oats
  • 1 cup applesauce (natural, no sugar added)
  • 1/4 cup oil (optional)
  • 1/2 raisin or crasins (or mix it up)
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 tsp cream of tartar
  • 1 tsp baking power
  • 1 tsp baking soda

Instructions

  1. First mash the bananas really well if you haven’t done so already
  2. Add 1 cup of apple sauce
  3. Add oil if desired, I don’t really think it makes a difference
  4. Add raisin or crasins, vanilla, cinnamon, baking power, and baking soda.
  5. Mix well
  6. Then add oats, beat until cookie dough is light and very fluffy. (~5 Minutes in a kitchen aid)
  7. Make into about 2 inch round cookies on a greased cookie sheet. Make sure to flatten the cookie because the cookies don’t flatten in the oven.

Oatmeal Flour Snickerdoodle Cookies

Today I really wanted to eat cookies but I didn’t want to make it out of flour and I really wanted to see if I could make cookies out of oatmeal flour. Guess what?!? It worked!

Preheat Oven

  • 400 degrees F

Ingrediants

  • 4 cups of oats
  • 1/2 cup oil
  • 3/4 cup sugar (You can put less if you want to)
  • 2 eggs
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • 1/4 tsp salt
  • Additional 2 tsp sugar
  • 2 tsp cinnamon

Instructions

  1. Blend out the oats in a blender until you get a flour texture and measure out 2 3/4 cup of the oat flour
  2. Cream the oil and sugar together and add two eggs
  3. Stir together the 2 3/4 cup oat flour, 2 tsp cream of tartar, 1 tsp baking soda, and 1/4 tsp salt
  4. Mix the liquids with the flour mixture
  5. Roll dough into quarter inch balls
  6. Mix together the sugar and cinnamon in a small bowl
  7. Roll cookie balls in the sugar and cinnamon mixture
  8. Place on baking sheet
  9. Bake @ 400 degree F for 10 minutes
  10. Let the cookie cool before you eat it or else it will fall apart!
